Roast the vegetables for 18-20 minutes until they are tender and the edges are slightly caramelized.
While the vegetables roast, season the chicken breast evenly on both sides with the remaining salt, pepper, garlic powder, and dried oregano.
Heat the remaining 0.5 tbsp of avocado oil in a medium skillet over medium-high heat.
Place the chicken in the skillet and sear for 5-7 minutes per side, or until the internal temperature reaches 165°F and the exterior is golden brown.
Remove the chicken from the pan and let it rest for 3 minutes before slicing into strips.
Plate the roasted vegetables alongside the chicken and finish with a fresh squeeze of lemon juice over everything.
