6 oz Grass-fed sirloin steak
1 tbsp Ghee
2 cloves Garlic
0.75 tsp Sea salt
0.5 tsp Black pepper
1 tsp Fresh rosemary
1 cup Asparagus spears
0.5 tbsp Extra virgin olive oil
PREPARATION
Preheat your oven to 400°F (200°C) to prepare the vegetable side.
Toss the asparagus spears with the olive oil and a portion of the sea salt and black pepper on a baking sheet, then roast for 12-15 minutes until tender.
Pat the sirloin steak completely dry with paper towels and season both sides generously with the remaining sea salt and black pepper.
Heat a heavy cast-iron skillet over medium-high heat until it is very hot and just beginning to smoke.
Place the steak in the skillet and sear for 3-4 minutes per side for medium-rare doneness.
During the last 2 minutes of searing, add the ghee, smashed garlic cloves, and fresh rosemary to the skillet.
