Heat a large non-stick skillet or wok over medium-high heat with the sesame oil.
Add the diced chicken breast and season with sea salt, black pepper, garlic powder, and ground ginger.
Sauté the chicken for 5-6 minutes until golden brown and cooked through, then remove from the pan and set aside.
In the same skillet, add the diced carrots and sauté for 3 minutes until slightly softened.
Push the carrots to one side, crack the egg into the other side, and scramble until just set.
Add the cooked jasmine rice, frozen peas, and cooked chicken back into the skillet.
Drizzle with tamari and toss everything together for 2-3 minutes until the rice is slightly crispy and heated through.
Garnish with sliced green onions and serve immediately.
