Seared Salmon Fillet with Garlic Green Beans and Sweet Potato Mash
Pan-seared salmon served over creamy mashed sweet potatoes with garlic-sautéed green beans, finished with a bright and zesty squeeze of lemon.
INGREDIENTS
9 oz Salmon Fillet
150g Sweet Potato
100g Green Beans
1 tsp Extra Virgin Olive Oil
1 clove Garlic
Salt and Pepper to taste
Fresh Lemon wedge
PREPARATION
Peel and cube the sweet potato, then place in a pot of boiling water until fork-tender, about 12-15 minutes.
Drain the sweet potatoes and mash them using a fork or potato masher until smooth, seasoning with a pinch of salt.
While potatoes boil, trim the ends of the green beans.
Heat a small skillet over medium heat with a splash of water, add green beans and minced garlic, and cook until the beans are crisp-tender and water has evaporated.
Pat the salmon fillet dry with paper towels and season both sides with salt and pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side down and sear for 4-5 minutes until the skin is crispy.
Flip the salmon and cook for another 2-3 minutes until the internal temperature reaches 145°F.
Plate the sweet potato mash and garlic green beans alongside the salmon, finishing with a fresh squeeze of lemon juice.
