Baked Eggs with Spiced Yogurt and Pita
Soft-baked eggs nestled in a pool of creamy, garlic-infused yogurt and drizzled with a warm, smoky Aleppo pepper oil for a silky finish.
INGREDIENTS
1 cup Greek yogurt
1 clove Garlic
0.25 tsp Sea salt
3 large Eggs
1 tsp Extra virgin olive oil
0.25 tsp Aleppo pepper
0.25 tsp Ground cumin
1 whole Lebanese pita bread
1 tbsp Fresh dill
0.25 tsp Black pepper
PREPARATION
Preheat your oven to 375°F (190°C).
In a small bowl, whisk together the Greek yogurt, minced garlic, and sea salt until smooth.
Spread the yogurt mixture into the bottom of a small, oven-safe baking dish or skillet.
Use the back of a spoon to create three small wells in the yogurt and carefully crack one egg into each well.
Place the dish in the oven and bake for 10-12 minutes, or until the egg whites are just set but the yolks remain runny.
While the eggs bake, heat the olive oil in a small saucepan over low heat, then stir in the Aleppo pepper and ground cumin for 30 seconds until fragrant.
Remove the eggs from the oven, drizzle with the spiced oil, and garnish with fresh chopped dill and black pepper.
Toast the Lebanese pita bread until warm and soft, then serve immediately alongside the baked eggs.
