Classic Garlic Parmesan Pasta
Pan-seared chicken and chickpea pasta are tossed in a fragrant garlic-infused sauce and finished with a dusting of sharp, salty parmesan cheese.
INGREDIENTS
4 oz chicken breast
2 oz chickpea rotini
2 cloves garlic
1 tsp extra virgin olive oil
1 tbsp grated parmesan cheese
1 tbsp fresh parsley
0.25 tsp sea salt
0.25 tsp black pepper
0.13 tsp red pepper flakes
1 tsp lemon juice
PREPARATION
Bring a medium pot of salted water to a boil and cook the chickpea rotini according to package directions until al dente.
While the pasta cooks, dice the chicken breast into bite-sized pieces and season with half of the sea salt and black pepper.
Heat the olive oil in a large skillet over medium-high heat. Add the chicken and sear until golden brown and cooked through, about 5-6 minutes.
Reduce the heat to low and add the minced garlic and red pepper flakes to the skillet, sautéing for 1 minute until aromatic.
Reserve 2 tablespoons of the pasta water, then drain the rotini.
Add the cooked pasta and reserved water to the skillet with the chicken and garlic, tossing to coat.
Stir in the lemon juice, fresh parsley, and the remaining salt and pepper.
Remove from heat and sprinkle with the grated parmesan cheese before serving.
