Baked Apple Crumble with Oat Topping
Tender apples roasted with cinnamon and topped with a crunchy toasted oat crumble, served over a thick and creamy protein-packed yogurt base.
INGREDIENTS
1 cup Non-fat Greek yogurt
0.75 scoop Vanilla protein powder
1 medium Granny Smith apple
0.25 cup Rolled oats
0.5 tbsp Coconut oil
1 tsp Maple syrup
0.5 tsp Ground cinnamon
0.13 tsp Sea salt
0.25 tsp Vanilla extract
1 tbsp Water
PREPARATION
Preheat your oven to 375°F (190°C).
Core and dice the Granny Smith apple into small, uniform half-inch cubes.
In a small oven-safe ramekin or baking dish, toss the apple cubes with the water and half of the ground cinnamon.
Cover the dish with foil and bake for 15 minutes until the apples begin to soften.
While the apples bake, prepare the crumble by mixing the rolled oats, coconut oil, maple syrup, sea salt, and the remaining cinnamon in a small bowl until well combined.
Remove the foil from the apples, sprinkle the oat crumble evenly over the top, and return to the oven uncovered for another 10 to 12 minutes until the topping is golden and fragrant.
In a separate serving bowl, whisk together the Greek yogurt, vanilla protein powder, and vanilla extract until the mixture is completely smooth and fluffy.
Spoon the warm baked apple crumble directly over the protein yogurt and serve immediately.
