120g Sweet Potato
150g Asparagus
1.5 tsp Avocado Oil

PREPARATION
Preheat oven to 400°F (200°C).
Peel and cube the sweet potato into 1/2-inch pieces.
Toss sweet potato cubes with 1/2 teaspoon of avocado oil and salt, then spread on a baking sheet.
Roast sweet potatoes for 15 minutes.
Trim the woody ends of the asparagus and toss with another 1/2 teaspoon of oil.
Add asparagus to the baking sheet and roast for an additional 10-12 minutes until tender.
Pat the salmon fillet dry with a paper towel and season both sides with salt and pepper.
Heat the remaining teaspoon of avocado oil in a non-stick skillet over medium-high heat.
Place salmon in the pan skin-side down and sear for 4-5 minutes until the skin is crispy.
Flip the salmon and cook for another 2-3 minutes until opaque and flaky.
