Slow Cooker Herb-Roasted Chicken
Slow-cooked chicken breast and root vegetables infused with aromatic herbs for a comforting meal that fills the kitchen with a savory fragrance.
INGREDIENTS
5 oz Chicken breast
0.75 cup Baby potatoes
0.5 cup Carrots
0.25 cup Celery
2 tsp Olive oil
1 tsp Dried rosemary
1 tsp Dried thyme
0.5 tsp Garlic powder
0.25 tsp Sea salt
0.25 tsp Black pepper
0.25 cup Low-sodium chicken broth
PREPARATION
Chop the baby potatoes, carrots, and celery into uniform bite-sized pieces and place them in an even layer at the bottom of the slow cooker.
In a small mixing bowl, combine the olive oil, dried rosemary, dried thyme, garlic powder, sea salt, and black pepper to create a herb paste.
Pat the chicken breast dry with a paper towel and rub the herb paste thoroughly over all sides of the meat.
Place the seasoned chicken breast directly on top of the bed of vegetables.
Carefully pour the chicken broth into the side of the slow cooker, ensuring you do not pour it over the chicken so the herb crust remains intact.
Secure the lid and cook on the low setting for 6 hours or on high for 3 hours until the chicken is tender and the vegetables are soft.
