5.5 oz Wild Atlantic Salmon
1.5 cups Cauliflower florets
1 cup Asparagus spears
1 tbsp Ghee
1 clove Garlic, minced
1 tbsp Lemon juice
PREPARATION
Place cauliflower florets in a steamer basket over boiling water and steam for 10-12 minutes until very soft.
While cauliflower steams, trim the woody ends off the asparagus and steam them for 4-5 minutes until tender-crisp, then set aside.
Pat the salmon fillet dry with a paper towel and season with a pinch of sea salt and black pepper.
Heat half of the ghee in a non-stick skillet over medium-high heat. Once hot, place salmon skin-side down and sear for 4-5 minutes until the skin is crispy.
Flip the salmon and cook for another 2-3 minutes until cooked through to your preference.
Transfer the steamed cauliflower to a blender or food processor with the remaining ghee, minced garlic, and a splash of water if needed. Blend until smooth and creamy.
