6.5 oz Wild Atlantic Salmon Fillet
1.5 cups Cauliflower Florets
1 cup fresh Green Beans
1.5 oz Nonfat Plain Greek Yogurt
2 teaspoons Extra Virgin Olive Oil
2 cloves Garlic, minced
PREPARATION
Place the cauliflower florets and minced garlic in a steamer basket over boiling water and steam for 10-12 minutes until very soft.
During the last 5 minutes of steaming the cauliflower, add the green beans to the steamer basket and cook until bright green and crisp-tender.
Transfer the steamed cauliflower and garlic to a bowl, add the Greek yogurt and one teaspoon of olive oil, then mash or blend until smooth and creamy.
Season the salmon fillet with salt and pepper.
Heat the remaining teaspoon of olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the skillet skin-side up and sear for 4-5 minutes, then flip and cook for another 3-4 minutes until the internal temperature reaches 145°F.
