5 oz Wild Atlantic Salmon Fillet
1.5 cups Brussels Sprouts, halved
0.5 cup Cooked Brown Lentils
1 tsp Extra Virgin Olive Oil
2 cloves Garlic, minced
1 tbsp Fresh Lemon Juice
2 tbsp Low-Sodium Vegetable Broth
PREPARATION
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Toss the halved Brussels sprouts with half of the olive oil and a pinch of sea salt and black pepper.
Spread the sprouts on the baking sheet and roast for 20-25 minutes until the edges are tender and charred.
While the sprouts roast, heat the remaining olive oil in a non-stick skillet over medium-high heat.
Season the salmon fillet with salt and pepper, then sear it skin-side down for 4-5 minutes until the skin is crisp.
Flip the salmon carefully and cook for another 3-4 minutes until it reaches your desired level of doneness.
In a small saucepan, combine the cooked lentils, vegetable broth, and half of the minced garlic over medium heat.
