Peel the sweet potato and cut into small cubes, then boil in water for about 10-15 minutes until tender.
Drain the sweet potatoes and mash them until smooth, seasoning with a pinch of sea salt if desired.
Pat the salmon fillet dry with a paper towel and season both sides with salt and pepper.
Heat half of the olive oil in a non-stick skillet over medium-high heat.
Place the salmon skin-side down in the pan and sear for 4-5 minutes until the skin is crispy.
Flip the salmon and cook for another 2-3 minutes until the internal temperature reaches 145°F.
Remove the salmon from the pan and let it rest.
In the same skillet, add the remaining olive oil and the asparagus spears.
Sauté the asparagus for 3-5 minutes until bright green and slightly charred.
Plate the sweet potato mash, top with the seared salmon, and serve the asparagus on the side.
Drizzle fresh lemon juice over the salmon and vegetables before serving.
