Seared Salmon with Garlic Green Beans and Cauliflower Mash
Pan-seared salmon fillet served over a bed of velvety cauliflower mash with crisp garlic-sauteed green beans.
INGREDIENTS
5 oz Salmon Fillet
1.5 cups Cauliflower florets
1 cup Green beans
1 tsp Extra virgin olive oil
2 cloves Garlic, minced
2 tbsp Nonfat plain Greek yogurt
PREPARATION
Steam the cauliflower florets in a steamer basket over boiling water until very tender, approximately 10 to 12 minutes.
While the cauliflower is steaming, heat half of the olive oil in a non-stick skillet over medium-high heat.
Season the salmon fillet with a pinch of salt and pepper, then place it in the skillet skin-side down.
Sear the salmon for 4 to 5 minutes per side until the exterior is golden and the center is just opaque.
Remove the salmon from the pan and set aside; add the remaining oil to the same skillet.
Toss in the green beans and minced garlic, sautéing for 3 to 5 minutes until the beans are bright green and tender-crisp.
Drain the steamed cauliflower and transfer to a bowl; add the Greek yogurt and mash until smooth and creamy.
Plate the cauliflower mash, top with the seared salmon, and serve the garlic green beans alongside.
