PREPARATION
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Peel and dice the sweet potato into 1/2-inch cubes. Toss with 1 teaspoon of the olive oil and a pinch of sea salt.
Spread the sweet potatoes on the baking sheet and roast for 20-25 minutes until tender and caramelized.
While potatoes roast, thinly shred the red cabbage and slice the zucchini into half-moons.
