Pan-Seared Steak with Garlic Herb Butter
Pan-seared sirloin basted in a fragrant garlic-herb ghee, served alongside snap-crisp roasted asparagus for a savory and satisfying finish.
INGREDIENTS
6 oz Top sirloin steak
1 tbsp Ghee
1 cup Asparagus
1 tsp Extra virgin olive oil
1 clove Garlic
0.5 tsp Fresh rosemary
0.5 tsp Fresh thyme
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Pat the steak completely dry with paper towels and season both sides evenly with sea salt and black pepper.
Heat the extra virgin olive oil in a cast-iron skillet over medium-high heat until it begins to shimmer.
Place the steak in the hot skillet and sear for 3-4 minutes per side until a deep golden-brown crust has formed.
Reduce the heat to medium and add the ghee, smashed garlic clove, rosemary, and thyme to the side of the pan.
Tilt the skillet slightly and use a large spoon to continuously baste the steak with the melting herb-infused ghee for the final 2 minutes of cooking.
Transfer the steak to a cutting board and allow it to rest for at least 5 minutes to lock in the juices.
While the steak rests, add the asparagus to the same skillet and sauté in the remaining pan juices for 3-5 minutes until tender-crisp.
Slice the steak against the grain and serve immediately alongside the asparagus, drizzling any extra pan juices over the top.
