Pan-Seared Salmon with Lemon-Dill Pasta
Crisp pan-seared salmon served over whole wheat pasta and fresh spinach, all tossed in a velvety lemon-dill yogurt sauce.
INGREDIENTS
5 oz Salmon fillet
1 oz Whole wheat pasta
0.25 cup Greek yogurt
1 tsp Olive oil
1 cup Baby spinach
1 tbsp Lemon juice
1 tsp Lemon zest
1 tbsp Fresh dill
1 clove Garlic
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Bring a pot of salted water to a boil and cook the whole wheat pasta according to package directions until al dente.
Pat the salmon fillet dry with a paper towel and season both sides with the sea salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat and sear the salmon for 4-5 minutes per side until golden and cooked through.
In a small bowl, whisk together the Greek yogurt, lemon juice, lemon zest, minced garlic, and chopped fresh dill to create the sauce base.
Drain the pasta, reserving two tablespoons of pasta water, then return the pasta to the pot and toss with the baby spinach until slightly wilted.
Stir the yogurt sauce and reserved pasta water into the noodles until creamy, then plate the pasta and top with the seared salmon fillet.
