Ginger-Garlic Chicken Stir-Fry
Sautéed chicken breast tossed with crisp broccoli and vibrant bell peppers in a zesty ginger-garlic sauce, served over a bed of fluffy brown rice.
INGREDIENTS
5 oz chicken breast
0.5 cup cooked brown rice
1 cup broccoli florets
0.5 cup red bell pepper
2 tsp avocado oil
1 tsp toasted sesame oil
1 tbsp tamari
1 tbsp fresh ginger
2 clove garlic
0.25 tsp sea salt
0.25 tsp black pepper
PREPARATION
Prepare the brown rice according to package instructions and keep warm.
Cut the chicken breast into bite-sized pieces and season with sea salt and black pepper.
Heat the avocado oil in a large skillet or wok over medium-high heat.
Add the chicken to the pan and cook until golden brown and cooked through, approximately 5 to 7 minutes, then remove and set aside.
In the same pan, add the broccoli florets and sliced red bell pepper with a splash of water to steam-sauté until tender-crisp.
Stir in the minced ginger and garlic, cooking for 1 minute until highly fragrant.
Return the cooked chicken to the pan and pour in the tamari and toasted sesame oil, tossing everything to coat evenly.
Serve the hot stir-fry over the bed of fluffy brown rice.
