Pan-Seared Salmon with Roasted Asparagus
Pan-seared salmon fillet with a crispy skin served alongside tender roasted asparagus and finished with a bright squeeze of fresh lemon.
INGREDIENTS
7 oz Salmon fillet
1 cup Asparagus
1 tbsp Extra virgin olive oil
1 clove Garlic
0.5 whole Lemon
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Preheat your oven to 400°F (200°C) and line a small baking sheet with parchment paper.
Trim the woody ends off the asparagus and toss the spears on the baking sheet with 0.5 tbsp of olive oil, minced garlic, and a pinch of salt and pepper.
Roast the asparagus for 10-12 minutes until tender and slightly charred at the tips.
While the asparagus roasts, pat the salmon fillet completely dry with a paper towel and season both sides with the remaining salt and pepper.
Heat the remaining 0.5 tbsp of olive oil in a non-stick or cast-iron skillet over medium-high heat.
Place the salmon in the pan, skin-side down, and press gently with a spatula for 10 seconds to ensure even contact.
Sear the salmon for 4-5 minutes without moving it until the skin is golden and crispy, then flip and cook for another 2-3 minutes until the internal temperature reaches 125-130°F for medium-rare.
Plate the salmon next to the roasted asparagus and finish with a generous squeeze of fresh lemon juice over everything.
