Garlic Herb Roasted Pork Tenderloin
Oven-roasted pork tenderloin rubbed with aromatic garlic and fresh herbs, served alongside crisp-tender asparagus for a vibrant and savory dinner.
INGREDIENTS
8 oz Pork tenderloin
1 tbsp Olive oil
2 cloves Garlic
1 tsp Fresh rosemary
1 tsp Fresh thyme
0.25 tsp Sea salt
0.25 tsp Black pepper
1.5 cups Asparagus
PREPARATION
Preheat your oven to 400°F (200°C) and line a large sheet pan with parchment paper.
Finely mince the garlic cloves, fresh rosemary, and fresh thyme.
In a small bowl, whisk together the olive oil, minced garlic, rosemary, thyme, sea salt, and black pepper.
Place the pork tenderloin on one side of the sheet pan and rub half of the garlic-herb oil over the entire surface of the meat.
Arrange the trimmed asparagus on the other side of the sheet pan and drizzle with the remaining garlic-herb oil, tossing to coat evenly.
Roast in the oven for 20 to 25 minutes, or until the pork reaches an internal temperature of 145°F and the asparagus is tender.
Remove from the oven and let the pork rest for 5 minutes before slicing into medallions to serve.
