Smoky Ground Turkey & Roasted Fall Vegetables
Sautéed ground turkey and roasted autumn vegetables tossed in a smoky spice blend for a hearty, charred finish.
INGREDIENTS
8 oz Ground turkey
0.5 cup Sweet potato
1 cup Cauliflower florets
1 cup Green cabbage
0.5 tbsp Extra virgin olive oil
1 tsp Smoked paprika
0.5 tsp Garlic powder
0.25 tsp Sea salt
0.25 tsp Black pepper
1 tsp Apple cider vinegar
PREPARATION
Preheat oven to 400°F and line a baking sheet with parchment paper.
Toss the cubed sweet potato and cauliflower florets with half of the olive oil and half of the smoked paprika, salt, and pepper.
Roast the vegetables for 20 minutes until the sweet potatoes are tender and cauliflower has golden edges.
Heat the remaining olive oil in a large skillet over medium-high heat and add the ground turkey.
Cook the turkey until browned, breaking it into small crumbles with a wooden spoon.
Stir the shredded cabbage, garlic powder, and remaining smoked paprika, salt, and pepper into the skillet.
Sauté until the cabbage is wilted and tender, approximately 6 minutes.
Deglaze the pan with apple cider vinegar, scraping the bottom to release any flavorful browned bits.
Combine the roasted vegetables with the turkey and cabbage mixture in the skillet and serve warm.
