Preheat your oven to 400°F and line a small baking sheet with parchment paper.
Scrub the russet potato thoroughly, pierce it several times with a fork, and rub the skin with 0.5 tsp of ghee and a pinch of sea salt.
Place the potato on the baking sheet and roast for 45 to 55 minutes, or until the skin is crisp and the center is tender.
While the potato roasts, heat a non-stick skillet over medium-high heat with the remaining 0.5 tsp of ghee.
Add the ground turkey to the skillet, seasoning it with garlic powder, paprika, and the remaining sea salt and black pepper.
Sauté the turkey, breaking it into small crumbles with a wooden spoon, until it is fully browned and cooked through.
Once the potato is done, slice it lengthwise and use a fork to gently fluff the interior.
Stuff the potato with the cooked turkey crumbles and sprinkle the shredded cheddar cheese over the top.
Return the potato to the oven for 2 to 3 minutes until the cheese is beautifully melted.
Remove from the oven and top with a generous dollop of Greek yogurt and a sprinkle of fresh chives before serving.
