Seared Lean Beef Strips with Steamed Green Beans and Cauliflower Mash
Pan-seared sirloin strips served over a bed of garlic-infused cauliflower mash with a side of crisp-tender steamed green beans.
INGREDIENTS
6.5 oz Top Sirloin Steak, sliced into strips
2 cups Cauliflower Florets
1 cup Green Beans, trimmed
1 tsp Extra Virgin Olive Oil
1 tsp Grass-fed Butter
1 tsp Garlic Powder
Sea salt and black pepper to taste
PREPARATION
Place the cauliflower florets in a steamer basket over boiling water and steam for 10-12 minutes until very soft.
During the last 5 minutes of steaming the cauliflower, add the green beans to the steamer basket to cook until crisp-tender.
While vegetables steam, season the beef strips with sea salt and black pepper.
Heat the olive oil in a cast-iron skillet over medium-high heat until shimmering.
Add the beef strips to the skillet in a single layer and sear for 2 minutes per side until browned and cooked to your preferred level of doneness.
Remove the cauliflower from the steamer and place in a bowl; add the grass-fed butter, garlic powder, and a pinch of salt.
Mash the cauliflower with a fork or immersion blender until smooth and creamy.
Plate the cauliflower mash first, top with the seared beef strips, and serve the steamed green beans on the side.
