1/2 cup cooked Brown Rice
2 cups Fresh Spinach

PREPARATION
Rinse the brown rice and cook according to package directions until tender.
Pat the salmon filet dry with a paper towel and season both sides with sea salt and black pepper.
Heat half of the olive oil in a non-stick skillet over medium-high heat.
Place the salmon skin-side down in the pan and sear for 4-5 minutes until the skin is crisp, then flip and cook for another 3 minutes until cooked through.
Remove the salmon from the pan and let it rest on a plate.
In the same skillet, add the remaining oil and sauté the minced garlic for 30 seconds until fragrant.
