6 oz Salmon fillet
1 cup Red bell pepper
1 cup Yellow bell pepper
1 tbsp Extra virgin olive oil
0.25 tsp Sea salt
0.25 tsp Black pepper
0.5 tsp Garlic powder
0.5 tsp Dried oregano
1 tbsp Fresh lemon juice
PREPARATION
Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper for easy cleanup.
Slice the red and yellow bell peppers into thin strips and place them on one side of the prepared baking sheet.
Drizzle the bell peppers with half of the extra virgin olive oil and sprinkle with a pinch of sea salt and black pepper.
Place the salmon fillet on the other side of the baking sheet and pat it dry with a paper towel.
Brush the salmon with the remaining olive oil and season evenly with garlic powder, dried oregano, and the remaining salt and pepper.
Roast in the oven for 12 to 15 minutes, or until the salmon is opaque and flakes easily with a fork and the peppers are tender.
