Stir in the diced yellow onion and red bell pepper, sautéing for about 5 minutes until the vegetables are soft and translucent.
Add the minced garlic, ground cumin, smoked paprika, sea salt, and black pepper, stirring for 1 minute until the spices are aromatic.
Pour in the crushed tomatoes and stir to combine, then reduce the heat and let the sauce simmer for 5 to 7 minutes to thicken slightly.
Use the back of a spoon to create three small wells in the tomato mixture.
Carefully crack one egg into each well, then cover the skillet with a lid.
Cook for 3 to 5 minutes, or until the egg whites are fully set but the yolks are still soft and runny.
Garnish with fresh cilantro and serve immediately directly from the pan.
