Seared Salmon Fillet with Roasted Sweet Potato and Green Beans
Pan-seared wild salmon served with tender roasted sweet potatoes and garlic-rubbed green beans, finished with a squeeze of bright, zesty lemon.
INGREDIENTS
7.5 oz Wild Atlantic Salmon Fillet
100g Sweet Potato, cubed
100g Fresh Green Beans
1.5 tsp Extra Virgin Olive Oil
1 clove Garlic, minced
1 tbsp Fresh Lemon Juice
Pinch of Sea Salt and Black Pepper
PREPARATION
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Toss the cubed sweet potatoes with a half-teaspoon of olive oil and a pinch of sea salt on the prepared baking sheet.
Roast the sweet potatoes for 20 to 25 minutes until they are tender and slightly browned on the edges.
While the potatoes roast, season the salmon fillet on both sides with sea salt and freshly cracked black pepper.
Heat the remaining teaspoon of olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the skillet skin-side down and sear for 4 to 5 minutes until the skin is crispy and golden.
Carefully flip the salmon and cook for another 3 to 4 minutes until the fish is opaque and flakes easily with a fork.
In the final 3 minutes of salmon cooking, add the green beans and minced garlic to the skillet, sautéing them in the natural oils until the beans are bright green and tender-crisp.
Plate the seared salmon alongside the roasted sweet potatoes and garlic green beans, finishing the entire dish with a fresh squeeze of lemon juice.
