Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Peel and dice the sweet potato into small 1/2-inch cubes.
Toss the sweet potato cubes with 1 teaspoon of avocado oil and a pinch of sea salt, then spread them in a single layer on the baking sheet.
Roast the sweet potatoes for 20-25 minutes, flipping halfway through, until they are tender and slightly browned.
While the potatoes roast, slice the turkey sausage into rounds.
Heat the remaining 1 teaspoon of avocado oil in a non-stick skillet over medium heat.
Add the turkey sausage to the skillet and sauté for 3-4 minutes until lightly browned.
Add the fresh spinach to the skillet and cook for 1-2 minutes until it begins to wilt.
Pour the egg whites into the skillet and cook, stirring frequently, until the whites are fully set and scrambled.
Transfer the roasted sweet potatoes to a plate and top with the egg white and sausage scramble.
