Seared Salmon with Herb-Cauliflower Rice
Pan-seared wild salmon served over herbed cauliflower rice and topped with creamy avocado, finished with a bright and zesty squeeze of citrus.
INGREDIENTS
5.5 oz Wild Salmon Fillet
1.5 cups Cauliflower Rice
1 tsp Avocado Oil
0.25 medium Avocado
1 tbsp Lemon Juice
1 clove Garlic
2 tbsp Fresh Parsley
PREPARATION
Pat the salmon fillet dry with a paper towel and season with sea salt and black pepper.
Heat the avocado oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side down and sear for 4 minutes until the skin is crispy.
Flip the fillet and cook for another 2 minutes until the salmon is just opaque and flaky.
Remove the salmon from the pan and set it aside to rest.
Add the minced garlic and cauliflower rice to the same skillet and sauté for 4 minutes until tender.
Stir in the fresh parsley and lemon juice until the cauliflower rice is well coated and fragrant.
Plate the cauliflower rice, top with the seared salmon fillet, and garnish with sliced avocado.
