6 oz Top sirloin steak
1 bunch Asparagus
1 tbsp Extra virgin olive oil
0.5 tsp Sea salt
0.25 tsp Black pepper
0.5 tsp Garlic powder
PREPARATION
Preheat your oven to 400°F (200°C) and trim the woody ends off the asparagus.
Place the asparagus on a baking sheet and toss with half of the olive oil, half of the sea salt, and all of the garlic powder.
Roast the asparagus for 12 to 15 minutes until tender and slightly browned at the tips.
While the asparagus roasts, pat the steak dry with a paper towel and season both sides with the remaining sea salt and black pepper.
Heat the remaining olive oil in a cast-iron or heavy-bottomed skillet over medium-high heat until shimmering.
Place the steak in the hot skillet and sear for 4 to 5 minutes per side for medium-rare, or until it reaches your desired level of doneness.
Remove the steak from the pan and let it rest on a cutting board for at least 5 minutes to lock in the juices.
Slice the steak against the grain and serve alongside the roasted asparagus.
