PREPARATION
Pat the sirloin steak dry with a paper towel and season both sides evenly with sea salt and black pepper.
Heat a cast-iron skillet over medium-high heat and add half of the ghee, swirling to coat the pan.
Place the steak in the hot skillet and sear for 3 to 4 minutes per side for medium-rare, or until it reaches your desired doneness.
Remove the steak from the pan and let it rest on a cutting board for at least 5 minutes to keep it juicy.
