Seared Salmon with Garlic Green Beans and Sweet Potato Mash
Pan-seared wild salmon served with garlicky green beans and a creamy sweet potato mash, finished with a squeeze of fresh lemon for a bright, zesty touch.
INGREDIENTS
8.5 oz Wild Atlantic Salmon fillet
150g Sweet Potato, peeled and cubed
150g Fresh Green Beans, trimmed
2 tsp Extra Virgin Olive Oil
2 cloves Garlic, minced
1 tbsp Fresh Lemon Juice
Pinch of Sea Salt and Black Pepper
PREPARATION
Place the cubed sweet potatoes in a pot of boiling water and cook for 12-15 minutes until tender.
Drain the sweet potatoes and mash them until smooth, seasoning with a pinch of sea salt.
While potatoes cook, heat one teaspoon of olive oil in a skillet over medium-high heat.
Season the salmon fillet with salt and pepper, then place it in the skillet skin-side down.
Sear the salmon for 4-5 minutes per side until cooked through and crispy on the outside, then remove from the pan.
In the same skillet, add the remaining teaspoon of olive oil and the minced garlic, sautéing for 30 seconds until fragrant.
Add the green beans to the skillet and sauté for 5-7 minutes until tender-crisp.
Plate the salmon alongside the sweet potato mash and green beans, drizzling the lemon juice over the fish before serving.
