While the vegetables roast, slice the grain meat into bite-sized strips and finely dice the red bell pepper.
Heat the remaining olive oil in a large skillet over medium-high heat.
Add the grain meat and bell pepper to the skillet, seasoning with garlic powder and smoked paprika.
Sauté for 6 to 8 minutes, stirring occasionally, until the grain meat is golden and develops a crispy exterior.
Remove the roasted vegetables from the oven and transfer them into the skillet with the grain meat, tossing gently to combine.
Drizzle the entire medley with fresh lemon juice and serve immediately while hot.
