YOUR SOLIN GENERATED RECIPE
Sautéed chicken and chickpea pasta tossed in a velvety garlic-herb butter sauce with wilted spinach for a nourishing, savory finish.
INGREDIENTS
5 oz Chicken breast
1.5 oz Chickpea pasta
0.5 tbsp Grass-fed butter
1 cup Fresh baby spinach
2 cloves Garlic
1 tbsp Fresh parsley
0.25 tsp Sea salt
0.25 tsp Black pepper
1 tsp Extra virgin olive oil
1 tbsp Fresh lemon juice
PREPARATION
Boil a pot of salted water and cook chickpea pasta according to package directions until al dente. Reserve 2 tablespoons of pasta water.
Season the chicken breast with sea salt and black pepper.
Heat olive oil in a skillet over medium-high heat and sear the chicken until golden and cooked through, about 5-6 minutes per side. Remove and slice.
In the same skillet, reduce heat to low and add the grass-fed butter and minced garlic, sautéing until fragrant but not browned.
Stir in the baby spinach and cook until just wilted.
Add the cooked pasta, sliced chicken, reserved pasta water, and lemon juice to the skillet, tossing to coat everything in the herb butter.
Garnish with fresh chopped parsley and serve immediately.
