Seared Salmon with Steamed Green Beans and Garlic Mashed Cauliflower
Pan-seared salmon served over a velvety garlic cauliflower mash with a side of fresh steamed green beans.
INGREDIENTS
7.5 oz Wild Salmon Fillet
2 cups Cauliflower Florets
1.5 cups Green Beans
1 tsp Extra Virgin Olive Oil
1 clove Garlic, minced
PREPARATION
Steam the cauliflower florets in a steamer basket over boiling water until very tender, approximately 10 to 12 minutes.
While the cauliflower steams, trim the ends of the green beans and steam them in a separate basket for 5 to 6 minutes until bright green and snappy.
Transfer the tender cauliflower to a bowl or food processor, add the minced garlic and a pinch of salt, and blend or mash until a velvety consistency is reached.
Pat the salmon fillet dry with a paper towel and season both sides with a pinch of sea salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat until shimmering.
Place the salmon skin-side up in the pan and sear for 4 minutes until a golden crust forms.
Flip the salmon carefully and cook for another 3 to 4 minutes until the fish is opaque and flakes easily with a fork.
Spoon the garlic cauliflower mash onto a plate, top with the seared salmon, and serve the steamed green beans on the side.
