PREPARATION
Boil a pot of water and cook the egg noodles according to package directions until al dente; drain and set aside.
Heat the olive oil in a large skillet over medium-high heat.
Season the beef strips with sea salt and black pepper, then sear in the skillet until browned, about 2-3 minutes; remove beef and set aside.
In the same skillet, add the sliced mushrooms and diced onion, sautéing until the onions are translucent and mushrooms are browned.
