Pan-Seared Steak with Garlic Herb Butter
Pan-seared sirloin steak basted in a fragrant garlic-herb ghee, served with crisp-tender asparagus for a savory and satisfying dinner.
INGREDIENTS
6 oz sirloin steak
1 tbsp ghee
1 clove garlic
1 tsp fresh rosemary
1 tsp fresh thyme
0.25 tsp sea salt
0.25 tsp black pepper
1 cup asparagus
PREPARATION
Remove the steak from the refrigerator 20 minutes before cooking to reach room temperature.
Pat the steak completely dry with paper towels and season both sides generously with sea salt and black pepper.
Heat a heavy cast-iron skillet over medium-high heat until it is wisps of smoke begin to rise.
Place the steak in the hot skillet and sear for 3 to 4 minutes without moving it to develop a deep brown crust.
Flip the steak and add the ghee, smashed garlic clove, rosemary, and thyme to the side of the pan.
Tilt the pan slightly and use a large spoon to continuously baste the steak with the melting herb ghee for another 3 minutes.
Transfer the steak to a cutting board and let it rest for at least 5 minutes to lock in the juices.
While the steak rests, toss the asparagus into the same skillet and sauté in the remaining herb ghee for 4 minutes until bright green and tender.
Slice the steak against the grain and serve alongside the sautéed asparagus.
