Pan-Seared Steak with Garlic Herb Butter
Pan-seared grass-fed sirloin basted in a fragrant garlic-thyme ghee, served with crisp-tender asparagus for a savory and satisfying meal.
INGREDIENTS
6 oz Sirloin steak
1 tbsp Ghee
2 cloves Garlic
1 tsp Fresh thyme
0.5 tsp Sea salt
0.25 tsp Black pepper
1 cup Asparagus
1 tsp Lemon juice
PREPARATION
Pat the sirloin steak completely dry with paper towels and season both sides evenly with sea salt and black pepper.
Heat a heavy-bottomed cast-iron skillet over medium-high heat until it is very hot but not smoking.
Place the steak in the dry skillet and sear for 3 to 4 minutes without moving it to develop a deep golden crust.
Flip the steak and immediately add the ghee, smashed garlic cloves, and fresh thyme to the side of the pan.
Tilt the pan slightly and use a spoon to continuously pour the melting herb-infused ghee over the steak for the final 2 minutes of cooking.
Remove the steak from the pan and let it rest on a cutting board for at least 5 minutes to lock in the juices.
While the steak rests, add the asparagus to the same skillet with a splash of water and lemon juice, sautéing for 3 minutes until bright green and tender.
