Chicken Meal Prep Protein Bowl
Oven-roasted chicken breast and vibrant vegetables served over fluffy quinoa with a creamy lemon-tahini drizzle.
INGREDIENTS
5 oz Chicken breast
0.5 cup Cooked quinoa
1 cup Broccoli florets
0.5 cup Red bell pepper
0.5 tbsp Olive oil
0.5 tsp Sea salt
0.25 tsp Black pepper
0.5 tsp Garlic powder
1 tbsp Tahini
1 tsp Lemon juice
1 tsp Water
PREPARATION
Preheat your oven to 400°F and line a large baking sheet with parchment paper for easy cleanup.
Dice the chicken breast into one-inch cubes and chop the broccoli and red bell pepper into bite-sized pieces.
Place the chicken and vegetables on the baking sheet and toss with olive oil, sea salt, black pepper, and garlic powder until evenly coated.
Roast in the oven for 18 to 20 minutes until the chicken is fully cooked and the vegetables are tender with slightly browned edges.
While roasting, prepare the dressing by whisking the tahini, lemon juice, and water in a small bowl until the texture is smooth and creamy.
Place the cooked quinoa in the bottom of a meal prep container and layer the roasted chicken and vegetable mixture on top.
Drizzle with the tahini dressing immediately before serving or store the dressing in a separate small container to keep the bowl fresh for up to three days.
