Kodiak Protein Pancakes for Two
Whisked Kodiak mix and egg whites griddled into light, airy pancakes that boast a satisfyingly golden exterior and a warm hint of cinnamon.
INGREDIENTS
1 pack Kodiak Cakes Muffin Mix
2 large Eggs
1.5 cup Liquid egg whites
0.5 cup Ultra-filtered milk
1 tsp Vanilla extract
0.5 tsp Ground cinnamon
2 tbsp Almond butter
1 cup Fresh raspberries
PREPARATION
In a large mixing bowl, whisk together the large eggs, liquid egg whites, ultra-filtered milk, vanilla extract, and ground cinnamon until the mixture is completely smooth.
Add the entire pack of Kodiak muffin mix to the wet ingredients and stir gently with a spatula until just combined, being careful not to overmix to ensure the pancakes remain fluffy.
Preheat a large non-stick griddle or skillet over medium heat and lightly coat with a small amount of cooking spray or oil.
Ladle approximately 1/4 cup of batter per pancake onto the hot griddle, leaving enough space between each to allow for easy flipping.
Cook for 2-3 minutes until small bubbles form on the surface and the edges appear set, then flip and cook for an additional 1-2 minutes until golden brown.
Divide the pancakes between two plates and top each serving with one tablespoon of almond butter and half a cup of fresh raspberries.
