Slow-Cooked Pork Carnitas Tacos
Pork shoulder slow-cooked with citrus and spices until tender, then crisped to a golden finish and served in warm corn tortillas with zesty lime.
INGREDIENTS
4 oz Pork shoulder
0.5 cup Water
0.25 tsp Sea salt
0.25 tsp Black pepper
0.5 tsp Cumin
0.5 tsp Dried oregano
1 clove Garlic
0.25 cup Orange juice
1 small Corn tortillas
0.5 cup Non-fat Greek yogurt
1 tbsp Fresh cilantro
1 tbsp Red onion
0.5 medium Lime
PREPARATION
Trim excess fat from the pork shoulder and season all sides with sea salt, black pepper, cumin, dried oregano, and minced garlic.
Place the seasoned pork in a slow cooker with the water and orange juice; cover and cook on low for 8 hours until the meat is tender and shreds easily.
Remove the pork from the slow cooker and shred it using two forks, discarding any remaining large pieces of fat.
Heat a non-stick skillet over medium-high heat and add the shredded pork, pressing it down to crisp the edges until they reach a golden brown color.
Warm the corn tortillas in a separate dry pan for 30 seconds per side until pliable.
Divide the crisped pork between the tortillas and top each with a dollop of Greek yogurt, diced red onion, and fresh cilantro.
Serve immediately with lime wedges for squeezing over the tacos.
