Seared Chicken Breast with Roasted Cabbage and Chickpea Pasta
Pan-seared chicken breast served over fiber-rich chickpea pasta and oven-roasted cabbage wedges, finished with a squeeze of lemon and toasted garlic.
INGREDIENTS
4.6 oz Chicken Breast
1.5 oz Chickpea Pasta
2 cups Green Cabbage, chopped
1 tbsp Extra Virgin Olive Oil
2 cloves Garlic, minced
1 tbsp Lemon Juice
Salt and Pepper to taste
PREPARATION
Preheat your oven to 400°F and line a large baking sheet with parchment paper.
Toss the chopped cabbage wedges with half of the olive oil, a pinch of sea salt, and black pepper.
Spread the cabbage on the baking sheet and roast for 20-25 minutes until the edges are tender and caramelized.
While the cabbage roasts, bring a medium pot of salted water to a boil and cook the chickpea pasta according to package instructions until al dente.
Season the chicken breast with salt and pepper on both sides.
Heat the remaining olive oil in a skillet over medium-high heat and sear the chicken for 6-7 minutes per side until golden brown and cooked through.
Remove the chicken from the skillet to rest, then add the minced garlic to the same pan and sauté for 30-60 seconds until fragrant.
Drain the pasta and add it to the skillet along with the roasted cabbage and lemon juice, tossing to combine with the garlic oil.
Slice the chicken breast into strips and serve on top of the pasta and cabbage mixture.
