7 oz Pork tenderloin
1 medium Sweet potato
1 cup Asparagus
1 tbsp Olive oil
2 cloves Garlic
1 tsp Dried rosemary
1 tsp Dried thyme
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Preheat your oven to 400°F (200°C).
Mince the garlic and combine it in a small bowl with the dried rosemary, dried thyme, sea salt, black pepper, and half of the olive oil.
Rub the garlic-herb mixture evenly over all sides of the pork tenderloin.
Pierce the sweet potato several times with a fork and place it on a parchment-lined baking sheet.
Place the seasoned pork tenderloin on the same baking sheet and roast for 15 minutes.
Trim the woody ends off the asparagus, toss with the remaining olive oil, and add them to the baking sheet.
Continue roasting for another 10 to 12 minutes until the pork reaches an internal temperature of 145°F and the sweet potato is tender.
Remove from the oven and let the pork rest for 5 minutes before slicing into medallions to serve.
