Garlic Butter Shrimp Scampi
Succulent shrimp sautéed in a fragrant garlic butter sauce, served over a light blend of brown rice pasta and crisp zucchini noodles with a bright citrus finish.
INGREDIENTS
7 oz Raw shrimp
1 oz Brown rice spaghetti
1 cup Zucchini noodles
0.5 tbsp Grass-fed butter
1 tsp Extra virgin olive oil
3 clove Garlic
0.25 tsp Red pepper flakes
1 tbsp Fresh parsley
1 tbsp Lemon juice
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Boil a small pot of water and cook the brown rice pasta according to package directions until al dente; drain and set aside.
Pat the shrimp dry with paper towels and season evenly with sea salt and black pepper.
In a large skillet, heat the olive oil and grass-fed butter over medium-high heat until the butter is melted and bubbling.
Add the minced garlic and red pepper flakes to the skillet, sautéing for about 1 minute until the garlic is golden and aromatic.
Add the shrimp to the skillet in a single layer and cook for 2 minutes per side until they are pink and opaque.
Toss the cooked brown rice pasta and the zucchini noodles into the skillet with the shrimp.
Sauté for an additional 1-2 minutes, just until the zucchini noodles are slightly softened but still retain a bit of crunch.
Remove from heat, stir in the fresh lemon juice and chopped parsley, and serve immediately.
