Season the chicken breast generously on both sides with the spice mixture, pressing it in to ensure it sticks.
Heat the remaining olive oil in a heavy skillet over medium-high heat until shimmering.
Place the chicken in the skillet and sear for 6 to 7 minutes per side until a golden-brown crust forms and the internal temperature reaches 165°F.
Remove the chicken from the pan and let it rest for 3 minutes before serving with the roasted vegetables.
