In the same skillet, cook the turkey bacon until it reaches your desired level of crispiness, then crumble it into small pieces.
Once the potato is finished, slice it in half lengthwise and carefully scoop the flesh into a mixing bowl, leaving a thin sturdy shell.
Mash the potato flesh with the Greek yogurt until creamy, then fold in the cooked ground turkey and half of the shredded cheddar.
Spoon the mixture back into the potato shells, topping them with the remaining cheddar and the crumbled bacon.
Return the stuffed potatoes to the oven for 5 to 8 minutes until the cheese is melted and bubbly.
Garnish with freshly sliced green onions before serving warm.
