Pour the low-sodium chicken broth over the rice mixture and stir gently to ensure the rice is evenly distributed.
Nestle the seasoned chicken pieces into the rice and broth mixture in a single layer.
Cover the baking dish tightly with a lid or a piece of aluminum foil to ensure no steam escapes during the cooking process.
Bake in the center of the oven for 35 to 40 minutes, or until the rice is tender and all the liquid has been absorbed.
Remove from the oven and let the dish sit, still covered, for 5 minutes to allow the rice to finish steaming.
Remove the cover, fluff the rice with a fork, and garnish with chopped fresh parsley before serving.
