Pan-Seared Steak with Garlic Herb Butter
Juicy sirloin steak pan-seared to a perfect medium-rare and basted with a fragrant garlic-herb ghee, served alongside snap-crisp roasted asparagus.
INGREDIENTS
6 oz Top sirloin steak
1 tbsp Ghee
1 tsp Avocado oil
2 whole Garlic cloves
1 tsp Fresh rosemary
1 tsp Fresh thyme
0.5 tsp Sea salt
0.25 tsp Black pepper
1 cup Asparagus spears
0.5 cup Cherry tomatoes
PREPARATION
Pat the steak dry with paper towels and season both sides generously with sea salt and black pepper.
Heat the avocado oil in a cast-iron skillet over medium-high heat until the oil is shimmering.
Place the steak in the hot skillet and sear for 3-4 minutes per side to achieve a deep golden crust.
Reduce the heat to medium-low and add the ghee, smashed garlic cloves, rosemary, and thyme to the pan.
Tilt the pan slightly and use a large spoon to continuously baste the steak with the melted herb ghee for 2 minutes.
Remove the steak from the pan and transfer to a cutting board to rest for at least 5-7 minutes.
While the steak rests, add the asparagus and cherry tomatoes to the same skillet and sauté for 4-5 minutes until tender-crisp.
Slice the steak against the grain and serve alongside the vegetables, drizzling any remaining pan juices over the top.
