Clean-Eating Loaded Bacon Cheese Fries
Oven-roasted potato wedges topped with lean ground turkey and crispy bacon bits, finished with a blanket of melted sharp cheddar and cool Greek yogurt.
INGREDIENTS
1 medium Russet potato
1 tsp Avocado oil
5 oz 99% lean ground turkey
1 slice Turkey bacon
0.75 oz Sharp cheddar cheese
2 tbsp Nonfat Greek yogurt
0.5 tsp Garlic powder
0.5 tsp Onion powder
0.25 tsp Sea salt
0.25 tsp Black pepper
1 tbsp Green onions
PREPARATION
Preheat oven to 425°F and line a baking sheet with parchment paper.
Slice the Russet potato into thin wedges and toss in a bowl with avocado oil, sea salt, and black pepper.
Spread the wedges in a single layer on the baking sheet and roast for 25 minutes until golden and crispy.
While the fries roast, brown the ground turkey in a non-stick skillet over medium-high heat until no longer pink.
Season the turkey with garlic powder and onion powder, stirring to combine.
Crisp the turkey bacon in a separate pan or the microwave, then finely chop into bits.
Remove the fries from the oven and pile the cooked turkey and bacon bits directly on top of the wedges.
Sprinkle with the shredded sharp cheddar cheese and return to the oven for 2 minutes until the cheese is bubbling.
Transfer to a plate and garnish with a dollop of Greek yogurt and fresh sliced green onions.
