PREPARATION
Preheat your oven to 400°F and line a large baking sheet with parchment paper.
Place the broccoli florets, diced sweet potato, and sliced red bell pepper on the baking sheet.
Drizzle the vegetables with 0.5 tbsp of the olive oil and sprinkle with half of the sea salt and black pepper.
Roast the vegetables for 20-25 minutes until the sweet potatoes are tender and the broccoli is slightly charred.
While the vegetables roast, season the chicken breast on both sides with garlic powder, dried oregano, and the remaining salt and pepper.
Heat the remaining 0.5 tbsp of olive oil in a medium skillet over medium-high heat.
